「環球廚神.國際挑戰賽2024」泰國總決賽:全球廚藝盛典 2024年10月22日,「環球廚神.國際挑戰賽」泰國總決賽在Lenôtre Culinary Arts School舉行,吸引了來自18個國家的頂尖廚師,成為一場精彩的廚藝盛會。此次活動由「環球廚神國際專業協會」主辦,並在泰國工業部、泰國旅遊局、IMPACT、National Food Institute、法國和荷蘭的領事館全力支持下獲得空前成功。評審團包括米其林名廚及行業精英,充分展現了中西美食文化的融合。來自北京酒店管理學院的孔祥澤獲得學生組總冠軍,而台灣的胡善傑則摘取專業組總冠軍。在大師級組別中,李哲維以海鮮主題菜單驚艷全場。比賽的重頭戲是「名人明星名廚世界挑戰賽」,由泰國的Blue Elephant x NFI隊伍獲得總冠軍,隊長Nooror Somany Steppe榮膺MVP。主禮嘉賓泰國工業部部長Dr. Atchaka Sibunruang的出席為活動增添了不少榮耀。

盛會上還頒發了「年度最佳廚師」給予來自中華台北的黃景龍大師,而「終身成就獎」則頒發給兩位在餐飲界具有重大影響力的業界翹楚:稻香集團主席鍾偉平博士和米其林名廚鄭錦富。他們的卓越貢獻不僅推動了整體餐飲文化的發展,也激勵了無數廚藝人才。同時,協會還頒發了「榮譽功績勳章」,表彰對全球酒店餐飲業及主題公園發展作出重大貢獻的副主席梁啟誠,他的努力為行業和協會樹立了榜樣。

協會主席陳植漢(Louis Chan)及其團隊的努力,讓此次活動成為一個成功的國際交流平台。此次盛會不僅展示了廚藝人才,還促進了國際合作,為未來的廚藝發展奠定了基礎。展望2025年,協會將迎來成立十周年,期待與大家分享更多感人時刻與不凡故事。

GMC Global Challenge 2024 Grand Finale in Thailand - A Global Culinary Gala On October 22, 2024, the Grand Finale of the Gourmet Master Chefs Global Challenge took place at Lenôtre Culinary Arts School in Thailand, featuring top chefs from 18 countries in a spectacular culinary event. Organized by the International Association of Gourmet Master Chefs & Hospitality Executives, the event received support from the Thai Ministry of Industry, the Tourism Authority of Thailand, IMPACT, NFI, and the consulates of France and the Netherlands, showcasing a fusion of Eastern and Western culinary traditions.

Kong Xian-Gze from Beijing Hospitality Institute won the student category, while Taiwan's Hu Shan-Chieh took the professional title. Lee Che-Wei impressed in the master category. The highlight was the Celebrity & Master Chef Global Challenge, where the Thai team Blue Elephant x NFI triumphed, and team leader Nooror Somany Steppe earned the MVP title.

Dr. Atchaka Sibunruang, Thailand's Minister of Industry, graced the event, adding prestige. Awards included Chef of the Year for Master Huang Ching-Long and Lifetime Achievement Awards for Dr. Chung Wai-Ping and Michelin chef Cheng Kam-Fu. The association also honored Vice Chairman Joseph Leung with the Medal of the Order of Merit.

評審流程

評審團由「環球廚神國際專業協會」成員、星級名廚、食評家、餐飲機構或協會代表組成,並設有現場監督。評審團將評審所有菜式,並已向大會申報利益,如有個別評審與參賽者存有任何形式的利益,所作的評分將不獲計算。所有總決賽各個獎項將於頒獎典禮公布。

Judging Process

The judging panel consists of members from the International Association of Gourmet Master Chefs & Hospitality Executives, celebrity chefs, food critics, and representatives from hospitality institutions or associations, with on-site supervision. The judging panel will evaluate all the dishes, and have declared any conflicts of interest to the organizers. If any individual judge has any form of interest in a contestant, their scores will not be counted. All the final competition awards will be announced at the awards ceremony.

評審標準

1. 以菜式的色香味、創意、烹調技巧為主,鼓勵減少浪費食材。
2. 鼓勵以少油鹽糖烹調出健康又美味的菜式。
3. 鼓勵參賽者使用當地時令食材,以反映地域特色。
4. 加強參賽者的環保意識,如食材的可持續性、環保性
5. 評分百分比:55%味道、15%美學、15%創意、10%主題食材表達/演繹、5%食譜撰寫

Judging Process

1. The main focus will be on the taste, aroma, presentation, creativity and cooking techniques of the dishes. Reducing food waste is encouraged.
2. Dishes that are cooked in a healthy manner with reduced oil, salt, and sugar are encouraged.
3. Participants are encouraged to use local ingredients to reflect regional characteristics.
4. Emphasis will be placed on the participants' environmental awareness, such as the sustainability and eco-friendliness of the ingredients.
5. Scoring Breakdown: 50% Taste, 15% Aesthetics, 15% Complexity, 10% Creativity, 10% Themed Ingredient Expression
